KKU Faculty of Interdisciplinary Studies: Promoting Research and Innovation for Community Product Development at SIPDU Isan, Udon Thani

Faculty members from the Faculty of Interdisciplinary Studies at Khon Kaen University (KKU) presented their research and innovations aimed at community product development during the “SIDUP Isan: Exhibition of Research and Innovation for Society,” which took place in Udon Thani from October 21 to 23, 2025. The event operated under the theme “Innovation for Health and Environmental Friendliness Towards a Sustainable Future” and received support from the National Innovation Agency (NIA) and the Ministry of Higher Education, Science, Research, and Innovation (MHESI).
Innovative Products Showcase
Assistant Professor Suntaree Buchitchon, Ph.D., who serves as the dean of the Faculty of Interdisciplinary Studies, led the university’s engagement in the exhibition, showcasing innovative food products emphasizing sustainability and health. Among the featured products was the “Innovative Boat Noodle Jelly Drink,” developed by Assistant Professor Sup Amornpinyo, Ph.D., which reformulates a traditional local dish into a ready-to-drink health beverage. Another highlighted product was the “Innovative Roselle-Flavoured Three-Taste Squid Tentacle Product,” created by Associate Professor Kritsda Khajarern, Ph.D.
Additionally, a culinary item known as the “Siam Ginger Leave-Wrapped Snail Sausage,” which transforms the Golden Apple Snail into a consumable product, was presented by Assistant Professor Mallika Chantarangsee, Ph.D. This initiative reflects the faculty’s focus on improving quality of life and fostering community development through innovative culinary solutions.
Health and Environmental Innovation Forum
The exhibition also included a forum entitled “Health and Environmental Innovation Towards a Sustainable Future,” which was presided over by Mr. Piyapong Choowong, Deputy Governor of Udon Thani Province. This forum aimed to encourage knowledge sharing in areas such as health innovation, environmental technology, and sustainable development.
Collaboration and Community Engagement
As part of the event, KKU’s Faculty of Interdisciplinary Studies participated in SID-Talks on October 22, which showcased the practical applications of academic research in community settings. By collaborating with local entrepreneurs, the faculty aspires to develop innovative products that address societal needs and support sustainable initiatives across the Isan region.
The presentation of these projects at the SIDUP Isan event highlights KKU’s commitment to aligning academic endeavors with community engagement and innovation.
